Caramelized Onions

  1. 2 T extra virgin olive oil
  2. 1 1/4 lbs onions, sliced
  3. 1 t chopped fresh thyme leaves, optional
  4. 1/2 t salt
  5. 1/2 t pepper


  1. Heat the oliveoil over medium heat in a large, heavy skillet.
  2. Add the onions.
  3. Cook, stirring often, until tender and just beginning to color, about 10 minutes.
  4. Add the thyme and salt.
  5. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft.
