Fluffy Egg Strata

    If baking this recipe the same day as serving, let the strata rest for at least one hour, so the bread soaks up the eggs.

    This recipe can be doubled and made in a 9x13 pan. Increase baking time to 50-60 minutes.


  1. 6 eggs
  2. 1 1/2 c whole milk or half & half
  3. 1/2 c onion, diced or green onion
  4. 8 oz fresh spinach, chopped
  5. 6 oz cheddar cheese, shredded
  6. 1 c chopped deli ham, bacon, turkey sausage crumbles or chorizo
  7. 3/4 t salt
  8. 1 t ground mustard
  9. 1/2 t garlic powder
  10. 6 oz of french or rye bread, or mixture, cut or torn into 1-2 inch chunks


  1. Preheat over to 375F.
  2. Grease a 2 quart 8x10 rectangular baking dish.
  3. In a mixing bowl, add the eggs, milk, salt, ground mustard, and garlic powder. Whisk well to break up the yolks.
  4. In a skillet, saute the butter and onions until softened, add the spinach, cook until wilted.
  5. Stir in the cheese, ham, and the onion spinach mixture into the egg mixture.
  6. Place the bread pieces in the baking dish.
  7. Pour the egg mixture over top of the bread. Use a spatula to fold the bread over, gently, to make sure the ingredients are evenly distributed.
  8. Cover and chill until ready to bake.
  9. Bake, uncovered for 45 minutes, until the top is golden brown and puffy in the center. (Cover with foil if top is getting too brown.) Insert a sharp knife into the center to check that the eggs are set. If not, bake another 5-10 minutes.
  10. Cool for 5 minutes before cutting. Serve warm.
