Mojito Cupcakes

    It is important that custard is completely cooled before using or it will melt the butter. The custard can be made ahead and chilled in the fridge until needed.

    Store the cupcakes in the refrigerator until serving.


    Vanilla Cupcakes

  1. 1 1/3 c flour
  2. 1 t baking powder
  3. 1/2 t salt
  4. 4 oz, butter, softened, 1 stick
  5. 1 c sugar
  6. 2 eggs
  7. 2 t vanilla
  8. 1/2 c milk
  9. Mojito Glaze

  10. 2 T lime juice
  11. 2 T white rum, optional
  12. 1/4 c mint leaves
  13. 1/4 c sugar
  14. Lime Custard Buttercream Frosting

  15. 1 egg
  16. 1 c sugar
  17. 1/2 c milk
  18. 8 oz unsalted butter, at room temperature, 2 sticks
  19. 1 T white rum, optional
  20. 1 t vanilla
  21. zest of 1 lime
  22. Cupcakes

  23. lime slices for garnish
  24. mint leaves for garnish


    Vanilla Cupcakes

  1. Preheat oven to 350°F.
  2. Line a 12 cup muffin pan with paper liners.
  3. Whisk flour, baking powder, and salt in a bowl, and set aside.
  4. In a separate bowl, beat butter with a mixer on medium-high spped until smooth, 1 minute.
  5. Add sugar and beat until creamy, 4 minutes.
  6. Beat in eggs, one at a time.
  7. Beat in vanilla.
  8. Beat in the flour mixture in three batches on low speed, alternating with milk.
  9. Divide the batter among the muffin cups.
  10. Bake until the tops spring back, 20 to 25 minutes.
  11. Transfer to a rack and let cool 5 minutes in the pan, then remove the cupcakes to the rack to cool completely.
  12. Mojito Glaze

  13. Simmer lime juice, rum, mint leaves, and sugar until the sugar is dissolved.
  14. Let cool, then brush on the baked cupcakes.
  15. Lime Custard Buttercream Frosting

  16. Beat egg with a fork in a small, heavy saucepan.
  17. Mix in sugar and milk.
  18. Heat on medium-low heat, whisking constantly, until it just starts to boil. Continue beating rapidly until mixture thickens to a thin custard consistency.
  19. Remove from heat and cool completely, about 1 hour.
  20. Beat butter in a bowl with an electric mixer until light and creamy, about 5 minutes.
  21. Add cooled custard, 1 to 2 tablespoons at a time, beating well after each addition.
  22. Beat in rum, vanilla, and lime zest.
  23. Keep beating until buttercream is very light and fluffy.
  24. Cupcakes

  25. Frost cupcakes with buttercream and garnish with a lime slice and a mint leaf, if desired.
