Skillet Mushrooms with Swiss

  1. 1 T Olive Oil
  2. 1 garlic clove, minced
  3. 2 (8 oz) pkgs whole mushrooms (your favorite), large ones sliced in half
  4. 1/4 t salt
  5. 1/4 t fresh pepper
  6. splash of wine, red or white or balsamic vinegar
  7. 4 oz Swiss cheese, shredded
  8. 1 T chopped fresh parsley


  1. In skillet, heat oil over medium heat.
  2. Add garlic and saute for 30 seconds.
  3. Add mushrooms and saute until they release their liquid and begin to brown.
  4. Season with salt and pepper.
  5. Add a splash of wine or balsamic vinegar and saute until mostly evaporated.
  6. Sprinkle cheese on top of mushrooms, and cover skillet until cheese is melted.
  7. Sprinkle with parsley and serve.
