Italian Layered Dip with Crisp Crackers

    This recipe is not a deep layered dip; assemble it on a shallow, microwave-safe platter or dinner plate.


  1. 1 (15.5 oz) can great northern beans, drained and rinsed
  2. 1 oz Parmesan cheese, shredded (1/4 c)
  3. 1/4 c purchased Caesar salad dressing
  4. 1 c pepperoni, finely chopped (4 oz)
  5. 1/2 c pepperoncini peppers, chopped and drained
  6. 3 oz Italian cheese blend, finely shredded (3/4 c)
  7. 1 t fresh oregano, chopped
  8. crisp crackers


  1. Place beans, Parmesan, and salad dressing in food processor bowl with metal blade; process until smooth.
  2. Spread mixture in ungreased 9 inch microwave-safe pie pan or quiche dish.
  3. Top with pepperoni, pepperoncini peppers, Italian cheese and oregano.
  4. Cover with microwave-safe plastic wrap.
  5. Microwave on high for 1 1/2 to 2 minutes, turning pan once halfway through cooking.
  6. Serve with crisp crackers.
