Macaroni and Cheese with Bacon and Peas, Instant Pot

Ingredients

  1. 3 bacon slices, chopped
  2. 2 garlic cloves, minced
  3. 3 1/2 c water
  4. 4 c dried pasta
  5. 2 T flour
  6. 1 1/2 c milk
  7. 4 oz cream cheese
  8. 2 c shredded Cheddar cheese
  9. 2 c frozen peas, thawed

Instructions

  1. Heat the Instant Pot on the sauté function.
  2. Add the bacon, and cook for 2 to 3 minutes until the bacon begins to crisp.
  3. Stir in the garlic and sauté for about 30 more seconds.
  4. Pour in 3 1/2 cups of water, and stir in the pasta.
  5. Cover the Instant Pot and cook on high pressure for 5 minutes.
  6. Quick release the pressure.
  7. Combine the flour and milk and whisk until smooth.
  8. Pour the milk mixture into the Instant Pot.
  9. Turn the Instant Pot back onto sauté, and simmer the pasta until the milk begins to thicken, about 4-5 minutes.
  10. Cut the cream cheese into 1 inch pieces and stir it into the pasta until it melts and is completely mixed in.
  11. Stir in the Cheddar cheese until melted.
  12. Add the peas and stir to mix in.
  13. Serve when warm.
