Creamy Chicken Tortellini Soup

  1. 1 T butter
  2. 1 yellow onion diced
  3. 2 carrots thinly sliced
  4. 1 zucchini, diced
  5. 1 to 2 garlic cloves minced
  6. 1 lb boneless skinless chicken breasts, cubed
  7. 1 t Italian Seasoning
  8. 1 t dried thyme
  9. salt to taste
  10. pepper to taste
  11. 6 cchicken broth
  12. 1 (9 oz) pkg dried cheese tortellini
  13. 1 c half & half or heavy cream


  1. Set your Instant Pot on saute and melt the butter.
  2. Add onions, celery, carrots, zucchini, garlic, and chicken; add Italian seasoning, thyme, salt, and pepper, and continue to cook for about 4 to 5 minutes, or until chicken is browned and veggies are just beginning to soften.
  3. Stir in chicken broth and tortellini; close the lid and lock it.
  4. Press manual and adjust the time to 5 minutes.
  5. When the cycle is finished, wait 10 minutes and then manually release the pressure.
  6. Remove lid and press saute again.
  7. Stir in the spinach and half and half; cook for 1 to 2 minutes, or until soup is heated through.
  8. Ladle into soup bowls and serve.
