Green Chicken Pozole, Instant Pot

  1. 3 lbs chicken breasts or thighs. cut into large chunks
  2. 1 medium onion, halved
  3. 3 cloves garlic, minced
  4. 4 sprigs cilantro
  5. 1 (29 oz) can white hominy, drained
  6. 3 cups Spicy Salsa Verde
  7. 2 c chicken broth
  8. 1/2 t coarse salt, optional
  9. 1/2 t crushed dried Mexican oregano
  10. chopped red onion for garnish
  11. shredded cabbage or lettuce for garnish
  12. sliced radishes for garnish
  13. freshly squeezed lime juice for garnish
  14. tostada shells or tortilla chips for serving (optional)


  1. In the Instant Pot, combine the chicken, onion, garlic, cilantro, hominy, and salsa verde.
  2. Add the chicken broth, salt, if using, oregano, and 3 cups water.
  3. Lock the lid into place and select Manual or Pressure Cook and set the timer for 20 minutes on high.
  4. When cooking is complete, allow the pressure to release naturally. Unlock and remove the lid.
  5. Ladle into bowls and garnish with chopped onion, sliced radishes, and a squeeze of fresh lime juice.
  6. Serve with tostada shells or tortilla chips. if desired.
