Flank Steak with Cherry Tomato Salad

  1. 2 (1 1/2 lb) flank steaks
  2. Kosher salt
  3. 2 t light brown sugar, packed
  4. 1 t paprika
  5. 1/4 t cayenne pepper
  6. 1/4 t freshly ground black pepper
  7. canola oil (for brushing)
  8. Salad

  9. 1 recipe Cherry Tomato Salad


  1. Place steaks on a large rimmed baking sheet; season with salt.
  2. Mix sugar, brown sugar, paprika, cayenne, and pepper in a small bowl; rub all over steaks.
  3. Cover; refrigerate 1-3 hours.
  4. Let steaks stand at room temperature for 1 hour.
  5. Preheat gas grill to high. Brush grates with oil.
  6. Grill to desired doneness, about 5-7 minutes per side for medium-well (recommended). Let rest for 10 minutes.
  7. Slice steaks and serve with salad.
