Cherry Tomato Salad with Carrots and Celery

Ingredients

  1. 1 pt cherry tomates, cut in half
  2. 1 lb carrots, sliced
  3. 4 celery ribs, peeled to remove strings, cut into 1/3 in pieces
  4. 1 zucchini diced (optional)
  5. 2 green onions, sliced at an angle
  6. 3 T avocado oil
  7. 2 T water
  8. 2 T apple cider vinegar
  9. 1 t dark brown sugar
  10. 1/2 t celery seed
  11. 1/4 t salt
  12. 1/4 t black pepper to taste
  13. 3 T basil, finely julienned

Instructions

  1. Put tomatoes, carrots, celery, zucchini, if using, and green onions in a medium bowl.
  2. In a small bowl, combine water, vinegar, brown sugar, celery seed, salt, pepper, and oil.
  3. Add to bowl with vegetables, gently toss to coat.
  4. Cover and refrigerate up to 5 hours.
  5. Toss salad with basil.
  6. Use slotted spoon to transfer to serving dish.
