Pasta Fagioli Soup

Ingredients

  1. 1/2 lb Italian turkey sausage links, casings removed, crumbled
  2. 1 small onion, chopped
  3. 1 1/2 t canola oil
  4. 1 garlic clove, minced
  5. 2 c water
  6. 1 can (15 1/2 oz) great northern beans, rinsed and drained
  7. 1 can (14 1/2 oz) diced tomatoes, undrained
  8. 1 can (14 1/2 oz) reduced-sodium chicken broth
  9. 3/4 c uncooked elbow macaroni
  10. 1/4 t pepper
  11. 1 c fresh spinach leaves, cut as desired
  12. 5 t shredded Parmesan cheese

Instructions

  1. In a large saucepan, cook sausage over medium heat until no longer pink; drain, remove from pan and set aside.
  2. In the same pan, saute onion in oil until tender.
  3. Add garlic; saute 1 minute longer.
  4. Add the water, beans, tomatoes, broth, macaroni and pepper; bring to a boil.
  5. Cook, uncovered, until macaroni is tender, 8-10 minutes.
  6. Reduce heat to low; stir in sausage and spinach.
  7. Cook until spinach is wilted, 2-3 minutes.
  8. Garnish with cheese.
