  1. 1 (16 oz) loaves frozen white bread dough, thawed
  2. 2 T brown mustard
  3. 1/3 lb cooked ham, thinly sliced
  4. 4 oz salami, thinly sliced
  5. 2 oz provolone cheese, shredded
  6. 2 oz mozzarella cheese, shredded
  7. 1 egg yolks
  8. 1 T water


  1. Line a baking sheet with greased foil; set aside.
  2. Preheat oven to 375°F.
  3. On a lightly floured surface, roll the loaf of dough into a 26x6 inch rectangle.
  4. Lightly brush the mustard to within 1 inch of the edges of dough.
  5. Layer the ham and salami over the mustard.
  6. Combine provolone and mozzarella cheeses; sprinkle the cheeses over the meats.
  7. Brush edges of dough with water.
  8. Starting from a long side, roll up tightly into a spiral; seal seam.
  9. Place loaf on a prepared baking sheet seam side down.
  10. Egg wash

  11. Combine 1 egg yolks, and 1 t of water, beat slightly.
  12. Using a pastry brush, brush the egg wash on the top and sides of the loaf.
  13. Rising of Dough

  14. Cover the loaf and let rise in a warm place about 20 minutes or until nearly double.
  15. Sprinkle top with 1 T of the grated parmesan cheese.
  16. Bake in preheated oven for 25 to 30 minutes or until bottoms of loaf is golden brown.
  17. Remove from baking sheets; cool slightly on wire racks.
  18. Slice and serve warm.
