Chorizo Queso Dip

    You can use fresh Mexican Chorizo, just saute in a skillet until browned and cook, and blot on paper towels before adding to dip.


  1. 1 1/2 lbs white American cheese, cubed
  2. 1 (10 oz) can Rotel diced tomatoes with green chiles
  3. 8 oz soy chorizo


  1. Add cheese cubes and Rotel to a large, microwave safe bowl then microwave in 1 minutes increments, stirring between, until smooth.
  2. Add chorizo then stir to combine.
  3. Serve immediately with chips or transfer to a crock pot to keep warm.
  4. Add a splash of milk, if needed, to keep the dip creamy.
