Pumpkin Pie Bites

  1. 2 (9 inch) Refrigerated Pie Crusts, 15 oz.
  2. 2 eggs
  3. 1 (8 oz) cream cheese, softened
  4. 1/2 c sugar
  5. 1 c canned pumpkin
  6. 1 t vanilla extract
  7. 1 t pumpkin pie spice
  8. whipped cream


  1. Preheat oven to 350°F.
  2. Unroll pie crusts, and cut out 2 1/2 inch circles with a cookie cutter. Place these dough circles into mini muffin pans.
  3. Place eggs in a bowl and beat with an electric mixer until blended.
  4. Add cream cheese, sugar, pumpkin, vanilla, and pumpkin pie spice to bowl and beat until smooth.
  5. Spoon 1 T of filling into each crust.
  6. Bake for 25 minutes, or until filling is set and crust edges are golden brown.
  7. Allow to cool before eating.
  8. Serve with whipped cream, optional.


    Leftovers can be frozen and defrosted on a rack prior to serving.
