Berry No Bake Cheesecake Cups

    If preferred, this filling can be poured into a (6 oz) graham cracker or chocolate flavor pie crust!

Ingredients

    Crust

  1. 4 graham crackers, crushed
  2. 1/8 c brown sugar
  3. 2 T butter, melted
  4. Filling

  5. 3/4 c milk
  6. 14 regular marshmallows or 1 (7 oz) jar Marshmallow Creme
  7. 1 (8 oz) pkg cream cheese, softened
  8. 2 T orange liqueur or 2 T orange juice and 1/2 t orange extract
  9. Topping

  10. 2 kiwi fruit, peeled, quartered and sliced
  11. 1 1/2 c fresh raspberries and or blueberries

Instructions

    Crust

  1. Combine graham crackers, brown sugar, and $ butter in a small bowl, and stir to combine.
  2. Press the mixture into the bottom of 8 (9 oz) cups, and set aside.
  3. Filling

  4. In medium saucepan, heat milk over medium heat until steaming.
  5. Add marshmallows; remove from heat.
  6. Let stand 15 minutes to soften marshmallows, stirring several times until smooth.
  7. In medium bowl, beat cream cheese until fluffy.
  8. Beat in marshmallow mixture.
  9. Blend in liqueur or juice and extract.
  10. Pour over crusts.
  11. Refrigerate 2 hours or until set.
  12. Toppings

  13. In another medium bowl, combine kiwi fruit and berries.
  14. Spoon fruit mixture onto cups, and refrigerate until serving.
