Warm Pimento Cheese Dip

  1. 1 (8 oz) cream cheese, room temperature
  2. 1/2 c sour cream
  3. 2 T lemon juice
  4. 1/4 t Kosher salt
  5. 1/4 t pepper
  6. 1 (6.5 oz) jar pimentos or roasted red pepper, finely chopped
  7. 6 oz orange sharp Cheddar cheese, shredded
  8. 6 oz Pepper Jack cheese, shredded
  9. 2 green onions, thinly sliced
  10. crackers, celery sticks or Pumpernickel bread cubes


  1. Heat oven to 425°F
  2. In a large bowl, whisk together the cream cheese, sour cream, lemon juice, salt, and pepper.
  3. Fold in the pimentos, Cheddar cheese, Jack cheese and green onions.
  4. Transfer the mixture to a shallow 2 cup baking dish and bake until bubbling and light golden brown, 15 to 18 minutes.
  5. Serve with bread, celery and crackers.
