Green Chicken Chili

Ingredients

  1. 1 T vegetable oil
  2. 1 onion, chopped fine
  3. 3/4 t pepper
  4. 1/2 t salt
  5. 3 garlic cloves, minced
  6. 2 t ground cumin
  7. 4 c chicken broth
  8. 2 (15 oz) cans cannellini beans, rinsed
  9. 1 c jarred green salsa
  10. 3 c rotisserie chicken, shredded
  11. 1/2 c chopped fresh cilantro
  12. sour cream for garnish
  13. avocado for garnish

Instructions

  1. Heat oil in Dutch oven over medium heat until shimmering.
  2. Add onion, pepper, and salt and cook until softened, about 4 minutes.
  3. Stir in garlic and cumin and cook until fragrant, about 1 minute.
  4. Increase heat to medium high. Stir in broth, beans, and salsa and bring to boil.
  5. Reduce heat to medium low and simmer until flavors have melded, about 10 minutes.
  6. Using back of wooden spoon, mash some beans against side of pot until chili is slightly thickened.
  7. Stir in chicken and cilantro and cook until warmed through, about 2 minutes.
  8. Garnish with sour cream and avocado, if desired.
