Green Mountain Surprise

Ingredients

    Rice

  1. 3 1/4 c water
  2. 2 c white rice, rinsed
  3. 1 1/2 t salt
  4. 1/8 t pepper
  5. Spinach

  6. 2 T butter
  7. 1/4 c onion, minced
  8. salt to taste
  9. 1 garlic clove, minced
  10. pinch of nutmeg
  11. 3/4 c heavy cream
  12. 1/4 t cayenne pepper, or more to taste
  13. 1 (10 oz) bag spinach
  14. pepper to taste
  15. Eggs

  16. 2 T olive oil
  17. 4 eggs
  18. 1/4 t salt
  19. pepper to taste
  20. shredded Cheddar cheese, for garnish

Instructions

    Rice

  1. Bring the water, rice, salt, and pepper to a boil in a large saucepan over medium high heat.
  2. Reduce the heat to low, cover, and cook until all the water is absorbed, 16 to 18 minutes.
  3. Off heat, remove the lid and place a clean kitchen towel folden in half over the saucepan.
  4. Replace the lid and let sit.
  5. Spinach

  6. Melt the butter in a medium saucepan over medium heat.
  7. Add the onion and 1/4 t salt and cook, stirring occasionally, until softened, 5 to 7 minutes.
  8. Stir in the garlic and nutmeg and cook until fragrant, about 30 seconds.
  9. Whisk in the cream and cayenne pepper, bring to a simmer, and cook until thickened slightly, about 3 minutes.
  10. $ Stir in the spinach, one handful at a time, and cook until wilted, about 1 minute.

  11. Transfer the mixture to a blender and process until smooth.
  12. Rinse out the saucepan, then return the spinach mixture to the pot.
  13. Season with salt and pepper to taste.
  14. Eggs

  15. Heat the oil in a large nonstick skillet over low heat until shimmering.
  16. Quickly add the eggs to the skillet and season with salt and pepper.
  17. Cover and cook until the whites are set but the yolks are still runny, 2 to 3 minutes.
  18. Uncover the eggs and remove the skillet from the heat.
  19. Greem Mountain Surprise

  20. Fluff the rice with a fork and divide it onto four serving plates in mounds.
  21. Spoon some of the spinach Mixture on top of each mound of rice and carefully slide a fried egg on top.
  22. Sprinkle with cheese if desired.
