Pistachio Cookies

  1. 1/2 c blanched almonds, toasted
  2. 3/4 c butter
  3. 1/3 c sugar
  4. 1 t vanilla
  5. 1 1/2 c pistachio nuts, finely chopped
  6. halved pistachio nuts
  7. powdered sugar


  1. Preheat oven to 350°F.
  2. Place toasted almonds in a food processor and process till finely ground; set aside.
  3. Beat butter in a medium bowl with an electric mixer on medium to high speed for 30 seconds.
  4. Add sugar and beat till combined, scraping sides of bowl occasionally.
  5. Beat in 1 T water and vanilla till combined.
  6. Beat in flour, ground almonds, and chopped pistachios.
  7. Roll dough into 1 inch balls.
  8. Place balls 1 inch apart on an ungreased baking sheet.
  9. If desired, place a pistachio nut half on top of each ball.
  10. Bake for 16 to 18 minutes or till bottoms are lightly browned.
  11. Transfer cookies to wire racks and cool.
  12. Sprinkle cooled cookies with powdered sugar.
