Chocolate Peanut Butter Crunch Balls

  1. 1 c peanut butter
  2. 1/2 c dark corn syrup, or 1/2 c light corn syrup and 1 T molasses
  3. 2 c crisped rice cereal
  4. 8 oz milk chocolate or dark chocolate, broken into pieces
  5. 1/4 c finely chopped peanuts


  1. Beat together peanut butter, and corn syrup in a medium size bowl until well blended.
  2. Stir in rice cereal until well blended.
  3. Using rounded teaspoonfuls, shape mixture into 1 inch balls.
  4. Place on foil lined baking sheet and chill for several hours until firm.
  5. Place 6 oz chocolate into medium size microwave safe bowl.
  6. Microwave for 1 minute, stir chocolate until melted and smooth.
  7. Add remaining chocolate; continue stirring until smooth and well blended.
  8. Using a fork, spear peanut butter balls; dip into chocolate; shake off excess by gently tapping fork on edge of the bowl.
  9. Return to baking sheet, sprinkle tops with chopped peanuts.
  10. Let stand until hardened.
