Chewy Peanut Butter Cookies

  1. 1 1/2 c (7½ oz) flour
  2. 1 t baking soda
  3. ½ t salt
  4. 1 1/2 c packed (10 1/2 oz) dark brown sugar
  5. 1 c (9 oz) creamy peanut butter, such as Skippy (not natural)
  6. 2 eggs
  7. 4 T butter, melted and cooled
  8. 2 T honey
  9. 1 t vanilla extract
  10. 1/2 c unsalted dry-roasted peanuts, chopped fine


  1. Adjust oven rack to middle position and heat oven to 350°F.
  2. Line two rimmed baking sheets with parchment paper or silicone mat.
  3. Whisk flour, baking soda, and salt together in medium bowl.
  4. In large bowl, whisk sugar, peanut butter, eggs, melted butter, honey, and vanilla until smooth.
  5. Add flour mixture and stir with rubber spatula until soft, homogeneous dough forms
  6. Stir in peanuts until evenly distributed.
  7. Working with 1 tablespoon dough at a time, roll dough into 1 inch balls and evenly space on prepared sheets (15 dough balls per sheet). Using your fingers, gently flatten.
  8. Bake cookies, 1 sheet at a time, until edges are just set and just beginning to brown, 10 to 12 minutes, roatating sheet after 6 minutes.
  9. Let cookies cool on sheet for 5 minutes. Using wide metal spatula, transfer cookies to wire rack and let cool completely before serving.
