Vanilla Citrus Biscotti

  1. 2 1/3 c flour
  2. 1 t baking powder
  3. 1/2 t salt
  4. 1/4 t baking soda
  5. 1 stick butter, 1/2 c, 4 oz
  6. 3/4 c sugar
  7. 2 eggs
  8. 1 1/2 t grated grapefruit zest
  9. 1 1/2 t grated lemon zest
  10. 1/2 c chopped candied orange peel
  11. white chocolate candy bar for drizzle



  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper or silicone mat.
  3. Whisk the flour, baking powder, salt and baking soda in a medium bowl.
  4. Melt the butter in a large microwave-safe bowl in the microwave.
  5. Whisk in the sugar and eggs until smooth.
  6. Whisk in the grapefruit zest and lemon zest.
  7. Stir in the flour mixture with a rubber spatula until just combined, then stir in the orange peel.
  8. Divide the dough in half.
  9. Shape each piece into an 8 inch log about 2 inches wide on the prepared pan.
  10. Bake until golden, about 25 minutes.
  11. Let cool 10 minutes on the pan.
  12. Reduce the oven temperature to 325°F.
  13. Slice the logs crosswise 1/2 inch thick.
  14. Arrange the slices cut-side down on the same pan.
  15. Bake, rotating the pan once, until the cookies are dry, 30 to 35 minutes.
  16. Let cool completely on the pan.
  17. White Chocolate Drizzle

  18. Roughly chop the candy bar and place in a microwave safe bowl.
  19. Heat white chocolate, stirring occasionally until melted.
  20. With a spoon, drizzle white chocolate over biscotti and allow to cool completely.
