White Chocolate Chip Gingerbread Cookies

Ingredients

  1. 3/4 c butter
  2. 1 c sugar
  3. 1 egg, beaten
  4. 1/4 c molasses
  5. 2 c flour
  6. 2 t baking soda
  7. 1 t ground ginger
  8. 1 t cinnamon
  9. 1/2 t ground cloves
  10. 1/2 t nutmeg
  11. 1/2 t salt
  12. 1 (12 oz) pkg white chocolate chips

Instructions

  1. Beat together the butter with sugar in a mixing bowl until the mixture is smooth, and stir in beaten egg and molasses.
  2. In another bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  3. Stir the flour mixture into the molasses mixture.
  4. Stir in the white chocolate chips.
  5. Refrigerate dough for at least 1 hour.
  6. Preheat oven to 350F.
  7. Scoop up dough, and roll it into a 1 inch ball.
  8. Place onto an ungreased baking sheet, and flatten slightly.
  9. Repeat for the rest of the dough.
  10. Bake the cookies in the preheated oven until lightly browned, 10 to 15 minutes.
  11. Allow to cool on the baking sheet for about 1 minute before removing to finish cooling on racks.
