Lime-in-the-Coconut Almond Bark

  1. 1 (12 oz) pkg white baking chips
  2. 4 t shortening
  3. 2 to 4 drops green food coloring, optional
  4. 1/2 c sweetened shredded coconut, toasted
  5. 1/2 cup chopped or sliced almonds, toasted
  6. 4 teaspoons grated lime zest


  1. Line a 9 in square baking pan with foil; set aside.
  2. In a microwave, melt chips and shortening; stir until smooth.
  3. Stir in food coloring if desired.
  4. Stir in the coconut, almonds and lime zest.
  5. Spread into prepared pan.
  6. Chill until firm, 10-15 minutes.
  7. Break into small pieces.
  8. Store in an airtight container at room temperature.
