Ingredients

    Garlic Croutons

  1. 1/2 loaf of country bread, crusts removed
  2. 1 garlic clove, minced
  3. 1 c fresh oregano, finely chopped
  4. salt
  5. Meatballs

  6. 2 T olive oil
  7. 2 lb ground turkey
  8. 2 c garlic croutons (see above) or stuffing cubes
  9. 1 c dried cranberries
  10. 2 eggs
  11. 1/4 c bread crumbs
  12. 2 T chopped fresh sage
  13. 1 1/2 t salt
  14. Pinch of ground cinnamon
  15. 1 recipe of Mushroom Gravy, or 2 (10.5 oz) cans of turkey gravy

Instructions

    Garlic Croutons

  1. Preheat oven to 375°F.
  2. Tear the bread (crust removed) into bite-sized pieces and place in a large bowl.
  3. Add the garlic and oregano and drizzle with the olive oil. Toss gently to combine and season with salt.
  4. Place the croutons on a large rimmed baking sheet and bake for 20 minutes. Stir and continue to bake until the croutons are golden brown and crunchy, checking and stirring every 5 minutes.
  5. Meatballs

  6. Preheat oven to 450°F.
  7. Drizzle olive oil into a 9x13 inch baking dish and use your hand to evenly coat the entire surface. Set aside.
  8. Combine the ground turkey, croutons, cranberries, eggs, bread crumbs, sage, salt, and cinnamon in a large mixing bowl and mix by hand until thoroughly incorporated.
  9. Roll the mixture into round, golf ball-sized meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the meatballs in the prepared dish, being caferul to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching each other.
  10. Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
  11. Meanwhile, heat gravy in a saucepan until hot. Pour the gravy over the meatballs just prior to serving.
