Egg Roll in a Bowl

    If you like, you can drizzle with duck sauce and hot chinese mustard packets!

Ingredients

  1. 1 lb ground pork (can substitute with ground chicken, ground beef, or ground turkey)
  2. 1 sweet onion, diced
  3. 1 T sesame oil
  4. 1 T rice vinegar
  5. 2 t minced fresh garlic
  6. 1 t ground ginger
  7. 1/4 c low sodium soy sauce
  8. 1 T hoisin sauce (optional, but recommended)
  9. 1 (16 oz) bag coleslaw mix
  10. 1/2 c grated or “matchstick” carrots
  11. 2 green onions, thinly sliced
  12. salt to taste
  13. pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add ground meat and cook, stirring, until no longer pink. Drain; return meat to skillet.
  3. Add onion, sesame oil, and rice vinegar to the skillet.
  4. Cook, stirring, for a few more minutes, until tender.
  5. Add garlic, ginger, soy sauce, hoisin sauce (optional), coleslaw mix, and carrots to the skillet.
  6. Cook, stirring, for about 5-7 more minutes, or until cabbage is wilted.
  7. Remove skillet from the heat.
  8. Stir in green onions and season with salt and pepper, to taste.
