Mushroom Gravy

    This gravy is good served on pork chops!


  1. 3 T butter
  2. 1 lb white mushrooms, sliced
  3. 1 small onion, chopped fine
  4. 3 T flour
  5. 2 c low-sodium chicken broth
  6. 2 t minced fresh thyme leaves
  7. 1 T Dijon mustard
  8. salt to taste
  9. pepper to taste


    In a skillet cook butter, mushrooms, onion, and 1/4 teaspoon salt, covered, until softened, about 5 minutes.

  1. Remove lid and cook until moisture has evaporated, about 5 minutes.
  2. Sprinkle flour over mushrooms and stir to coat.
  3. Slowly stir in broth and thyme, and simmer until gravy has thickened, about 3 minutes.
  4. Off heat, stir in mustard and season with salt and pepper.
  5. Serve.
