Low Country Shrimp Boil, Instant Pot

    It takes 20 minutes for the Instant Pot to come up to pressure.

Ingredients

  1. 1 1/2 lbs baby red potatoes
  2. 1 (14 oz) pkg smoked sausage, cut into 3 inch pieces
  3. 1 sweet onion, quartered
  4. 4 t s Old Bay seasoning, divided
  5. 1 T hot sauce
  6. 3 ears corn, cut into thirds
  7. 1 (16 oz) pilsner or lager beer, or water
  8. 1 1/2 lbs medium shrimp, shelled
  9. 1/4 c unsalted butter
  10. 3 cloves garlic, minced
  11. 2 T chopped fresh parsley leaves
  12. 1 lemon, cut into wedges

Instructions

  1. Place potatoes, sausage, onion, 3 t Old Bay seasoning and hot sauce into a 6-qt Instant Pot.
  2. Stir until well combined.
  3. Top with corn and beer or water.
  4. Select manual setting; adjust pressure to high, and set time for 5 minutes.
  5. When finished cooking, quick-release pressure according to manufacturer’s directions.
  6. Add shrimp
  7. Select manual setting; adjust pressure to high, and set time for 1 minute.
  8. When finished cooking, quick-release pressure according to manufacturer’s directions.
  9. Melt butter in a small skillet over medium low heat.
  10. Stir in garlic and remaining 1 teaspoon Old Bay seasoning until fragrant, about 1-2 minutes.
  11. Serve immediately, drizzled with butter mixture, garnished with parsley and lemon, if desired.
