Mexican Chicken Crescent Sandwiches

Ingredients

  1. 1 chicken breast half (1/2 lb), cut into 1/2 in pieces or 1/2 lb rotisserie chicken shredded
  2. 1/2 t fajita seasoning
  3. 1/4 t garlic powder
  4. 1/8 to 1/4 t cayenne pepper
  5. 2 to 3 t butter
  6. 3 oz cream cheese, cut up
  7. 4 T Hatch chile jam
  8. 1/4 c finely diced red pepper or carrot shreds
  9. 1/4 c green onions, sliced
  10. 1 (8 oz) can crescent dinner rolls
  11. salsa for serving

Instructions

  1. Heat oven to 375°F.
  2. Sprinkle chicken with fajita seasoning, garlic powder, and cayenne pepper.
  3. Melt butter in large skillet over medium heat.
  4. Add chicken; stir fry for 2 minutes; or until cooked through.
  5. Add cream cheese, and Hatch jam; cook and stir until cheese is melted.
  6. Remove from heat; stir in red peppers and onions.
  7. Separate dough into 4 rectanges; firmly press perforations to seal.
  8. Spoon 1/4 of the chicken mixture on half of each rectange.
  9. Fold dough in half over filling; press edges together.
  10. Seal edges with fork; place on ungreased baking sheet.
  11. Bake for 15 to 20 minutes or until deep golden brown.
  12. Serve with salsa.
