Salame di Cioccolato - Chocolate Salami

  1. 7 oz dark chocolate
  2. 14 T (1 3/4 sticks) unsalted butter, softened
  3. 1/2 c granulated sugar
  4. 2 eggs
  5. 6 T rum (or different spirit, if desired)
  6. 7 oz crisp ladyfingers, crushed


  1. Melt the chocolate in the top of a double boiler.
  2. Beat the butter with thesugar with a hand mixer until light and fluffy.
  3. Add the eggs, and beat until incorporated.
  4. Add the melted chocolate, and beat until incorporated.
  5. Add the rum, if using, and beat until incorporated.
  6. Finally, fold the crushed ladyfingers into the mixture.
  7. Place a large sheet of waxed paper on a work surface.
  8. Pour the chocolate mixture onto the paper, and shape it into a cylinder, rolling the parchment paper around it and twisting the ends so that it resembles a large candy in a wrapper
  9. Wrap the entire cylinder in aluminum foil or tie with strings, and refrigerate until firm, at least 12 hours.
  10. To serve, unwrap the chocolate salami cylinder, and use a serrated knife to cut thick delicious slices.
