Raspberry Banana Breakfast Tacos

Ingredients

    Shell

  1. 3/4 c flour
  2. 3/4 c whole wheat flour
  3. 3 T sugar
  4. 2 t baking powder
  5. 3/4 t ground cinnamon
  6. 1/2 t salt
  7. 1 egg, room temperature
  8. 1 cup milk
  9. 2 T canola oil
  10. 1 t vanilla extract
  11. Taco

  12. 1/3 c cream cheese, softened
  13. 3 T vanilla yogurt
  14. 1 small banana, sliced
  15. 1 c fresh raspberries

Instructions

    Shell

  1. Whisk together flour and wheat flour, sugar, baking powder, cinnamon and salt.
  2. Combine egg, milk, oil and vanilla; stir into dry ingredients just until moistened.
  3. Preheat a griddle over medium heat.
  4. Lightly grease griddle.
  5. Pour batter by 1/2 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown.
  6. Turn; cook until second side is golden brown.
  7. Taco

  8. Meanwhile, beat together cream cheese and yogurt.
  9. Spread over pancakes; top with banana and raspberries.
  10. #Fold up.
