Garlic Smashed Potatoes

Ingredients

  1. 24 ounces Dutch yellow baby potatoes, or assorted baby potatoes
  2. 2 T olive oil
  3. 3 cloves garlic, pressed
  4. 1 T fresh thyme leaves
  5. kosher salt , to taste
  6. ground black pepper, to taste

Instructions

  1. Preheat oven to 450°F.
  2. Lightly oil a baking sheet or coat with nonstick spray.
  3. In a large pot of boiling water, cook potatoes until tender, about 15-20 minutes; drain well.
  4. Place potatoes onto the prepared baking sheet.
  5. Using a potato masher or fork, carefully smash the potatoes until flattened but still in one piece.
  6. Top with olive oil, garlic and thyme.
  7. Place into oven and bake for 18-20 minutes, or until golden brown and crisp.
  8. Season with salt and pepper.
  9. Serve immediately.
