Spicy Cuban Flank Steak

Ingredients

    Picadillo Relish

  1. 2 T vegetable oil
  2. 1 1/2 c chopped onions (3 medium)
  3. 3/4 c chopped red pepper (1 medium)
  4. 3/4 c chopped yellow pepper (1 medium)
  5. . 6 cloves garlic, minced

  6. 1 (15 oz) can black beans, rinsed and drained
  7. 1 c chopped tomatoes (2 medium)
  8. 1/4 c chopped pitted green olives
  9. 1/4 c chopped raisins
  10. 3 T red wine vinegar
  11. 1 t packed brown sugar
  12. 3/4 t ground cinnamon
  13. 1/4 t crushed red pepper
  14. Sandwich

  15. 2 large onions, cut into thin wedges
  16. 1 1/4 t ground cumin
  17. 1 1/4 t ground black pepper
  18. 1 1/4 t granulated garlic
  19. 1 1/4 t onion powder
  20. 1 1/4 t dried oregano, crushed
  21. 1 t crushed red pepper
  22. 1/2 t salt
  23. 1 2 lb beef flank steak
  24. 1 1/4 c low sodium beef broth
  25. 1/3 c lime juice
  26. 6 Cuban rolls or French rolls, split
  27. 1 recipe Picadillo Relish
  28. avocado slices, optional

Instructions

    Picadillo Relish

  1. In a large skillet heat oil over medium-high heat
  2. Add onions, red pepper, yellow sweet pepper, and garlic.
  3. Cook and stir about 5 minutes or until vegetables are tender.
  4. Stir in beans, tomatoes, green olives, raisins, vinegar, brown sugar, cinnamon, and crushed red pepper.
  5. Cook and stir for 2 minutes more.
  6. Cool to room temperature.
  7. Sandwich

  8. Place onions in a 3-1/2- or 4-quart slow cooker.
  9. In a small bowl combine cumin, black pepper, garlic, onion powder, oregano, red pepper, and salt.
  10. Cut meat crosswise into four pieces.
  11. Rub pice mixture evenly over all sides of meat pieces.
  12. Pour beef broth and lime juice into slow cooker
  13. Add meat to cooker.
  14. Cover and cook on low-heat setting for 8 to 9 hours or on high-heat setting for 4 to 4-1/2 hours.
  15. Transfer meat to a cutting board.
  16. Use two forks to pull meat into coarse shreds. Return meat to cooker; keep warm.
  17. To serve, use a slotted spoon to spoon mixture onto roll bottoms.
  18. Add Picadillo Relish.
  19. Add avocado slices, if desired.
  20. Cover with roll tops.
