Cajun Shrimp Kabobs with Sausage

  1. 8 oz large peeled, deveined raw shrimp (about 16)
  2. 6 oz smoked sausage, cut into 1⁄2 in rounds (about 1 cup)
  3. 1 small sweet onion, cut into 1in pieces (about 1 cup)
  4. 1 small red bell pepper, cut into 1 in pieces (about 3⁄4 cup)
  5. 16 cherry tomatoes (about 1⁄2 pint)
  6. 3 T olive oil
  7. 2 t Cajun seasoning
  8. 1 t chopped fresh thyme
  9. 1/2 t chopped fresh oregano
  10. 2 T chopped fresh flat-leaf parsley


  1. Preheat grill to high (450°F to 500°F), or heat a grill pan over high.
  2. Combine shrimp, sausage, onion, bell pepper, tomatoes, olive oil, Cajun seasoning, thyme, and oregano in a large bowl, and toss to coat.
  3. Thread mixture onto 8 (10 in) skewers, alternating ingredients.
  4. Place skewers on oiled grates, and grill, uncovered, until vegetables and sausage are lightly charred and shrimp is cooked through, about 2 minutes per side.
  5. Transfer skewers to a serving plate, and sprinkle with parsley.
