Cajun Couscous

Ingredients

  1. 2 T canola oil
  2. 1/2 c onion, finely diced
  3. 1/2 c green pepper, finely diced
  4. 1/4 c cerely, finely diced
  5. 1/2 t salt, optional
  6. 1/2 T paprika
  7. 1 1/2 t garlic powder
  8. 1 t oregano
  9. 1 t thyme
  10. 1 t pepper
  11. 1/4 t cayenne pepper
  12. 1 c water or reduced sodium chicken broth
  13. 1 c couscous

Instructions

  1. In a medium skillet, heat oil.
  2. Add onions, green pepper, and celery and saute under tender and fragrant, about 5 minutes.
  3. Add salt, if using, paprika, garlic powder, oregano, thyme, pepper, and cayenne pepper and toast spices for 30 seconds, stirring frequently.
  4. Increase heat to high and add water or broth. Bring to a boil.
  5. Once mixture has been brought to a boil, remove from heat and add couscous.
  6. Cover and leave mixture for 5 minutes.
  7. Fluff couscous with a fork.
  8. Serve immediately.
