Korean Shredded Beef Tacos

Ingredients

    Korean Beef

  1. 2 lb chuck roast
  2. 1 (16 oz jar) Korean BBQ Marinade & Sauce
  3. Gochujang Sauce

  4. 2/3 c sour cream
  5. 2 T gochujang hot pepper paste
  6. 2 t lime juice
  7. 1 T water
  8. 1/2 t sugar
  9. Tacos

  10. 12 mini flour tortillas
  11. 1/4 c red onion
  12. 2 T cilantro leaves, chopped
  13. 1/2 c radicchio, shredded

Instructions

    Korean Beef

  1. Cut beef into 2 inch cubes and place in slowcooker.
  2. Add 1/3 of the marinade sauce.
  3. Cover and cook on low for 7 to 8 hours.
  4. Remove meat from slowecooker, discarding liquid in slowcooker.
  5. Shred the meat and stir in remaining marinade sauce.
  6. Return to slowcooker to keep warm until serving.
  7. Gochujang Sauce

  8. In a small bowl whisk together the sour cream, gochujang paste, lime juice, water, and sugar and set aside.
  9. Tacos

  10. Serve shredded beef in tortillas.
  11. Top with onion, cilantro, and radicchio.
  12. Drizzle with gochujang sauce.
