Asian Flank Steak with Green Onions

Ingredients

  1. 1/2 c soy sauce
  2. 1/3 c sugar
  3. 2 T rice vinegar
  4. 1 T grated fresh ginger
  5. 2 T tamarind paste
  6. 1/4 t red pepper flakes
  7. 1 t cornstarch
  8. 1 flank steak (about 1 1/2 - 2 lb)
  9. 2 T vegetable oil
  10. 12 green onions, cut into 1 in lengths
  11. 2 t toasted sesame seeds
  12. rice for serving

Instructions

  1. Whisk soy sauce, sugar, vinegar, ginger, tamarind paste, pepper flakes, and cornstarch 
in medium bowl.
  2. Pat steak dry with paper towels. Heat 1 tablespoon oil in large nonstick skillet over medium-high heat until just smoking.
  3. Cook steak to 135°F, 4 to 6 minutes per side. Transfer to cutting board and tent with foil.
  4. Add remaining oil and green onions to empty skillet and cook until lightly browned, 2 to 3 minutes; transfer to bowl.
  5. Stir soy sauce mixture and any accumulated beef juices into skillet and simmer, scraping up any browned bits, until thickened, 2 to 3 minutes.
  6. Slice beef thin on bias against grain.
  7. Transfer to platter and top with sauce, scallions, and sesame seeds.
  8. Serve with rice.
