Jumble Cookies

Ingredients

  1. 1/4 c butter, softened
  2. 1/4 c granulated sugar
  3. 1/4 c brown sugar
  4. 1 egg
  5. 1/4 t vanilla extract
  6. 3/4 c plus 2 T flour
  7. 3/4 c rolled oats
  8. 1/4 t salt
  9. 1/4 t nutmeg
  10. 1/2 t baking powder
  11. 1/4 t baking soda
  12. 1/2 t cinnamon
  13. 1/2 c jumbo semisweet chocolate chips
  14. 1/3 c white chocolate chips
  15. 1/4 c raisins
  16. 1/4 c dried cranberries
  17. 1/4 c slivered almonds
  18. 1/3 c walnuts, chopped

Instructions

  1. In a large bowl cream together the and butter, sugar, and brown sugar. Scrape down the sides.
  2. Add egg and vanilla. Mix on medium until combined. Scrape down sides.
  3. In a medium mixing bowl, whisk together the flour, oats, salt, nutmeg, baking powder, baking soda, and cinnamon.
  4. With the mixer on low, add the flour mixture all at once. Mix on low until almost combined.
  5. Add in the chocolate chips, white chocolate chips, raisins, cranberries, almonds, and walnuts. Mix on low or with a spatula until combined and no more flour is visible.
  6. Chill the bowl with the dough in the refrigerator for at least two hours.
  7. Preheat the oven to 350 degrees F.
  8. Line two large baking sheets with parchment paper.
  9. Scoop 5 tablespoon portions of chilled dough on to the parchment paper lined baking sheets. Press each ball of dough gently with the palm of your hand to flatten into a cookie disc.
  10. Bake the cookies for 14-15 minutes until golden around the edges.
  11. Let cookies cool on sheet.
