Spicy Black Bean Bake

  1. 3 T olive oil
  2. 5 garlic cloves, peeled minced
  3. 1/4 c tomato paste
  4. 1 1/2 t smoked paprika
  5. 1/4 t red-pepper flakes
  6. 1 t ground cumin
  7. 2 (14 oz) cans black beans, drained and rinsed
  8. 1/2 c boiling water
  9. salt to taste
  10. pepper to taste
  11. 1 1/2 c grated Manchego cheese


  1. Preheat the oven to 475 degrees.
  2. In a 10-inch ovenproof skillet, heat the olive oil over medium-high
  3. Fry the garlic until lightly golden, about 1 minute.
  4. Stir in the tomato paste, smoked paprika, red pepper flakes and cumin, and fry for 30 seconds, reducing the heat as needed to prevent the garlic from burning.
  5. Add the beans, water and generous pinches of salt and pepper, and stir to combine.
  6. Sprinkle the cheese evenly over the top then bake until the cheese has melted, 5 to 10 minutes. If the top is not as browned as you’d like, run the skillet under the broiler for 1 or 2 minutes.
  7. Serve immediately.
