Farfalle with Italian Chicken Sausage (Instant Pot)

    Instant Pot Ingredients

  1. 12 oz fully cooked Italian-style chicken sausage, halved lengthwise and sliced
  2. 2 red and/or yellow peppers, coarsely chopped
  3. 1 (28 oz) can diced tomatoes (undrained)
  4. 1 (8 oz) can tomato sauce
  5. 1/2 c chicken or beef broth
  6. 4 cloves garlic, minced
  7. 2 t Italian seasoning, crushed
  8. 8 oz farfalle pasta or ziti
  9. Finishing Ingredients

  10. 1/2 c chopped fresh basil
  11. 1 c shredded provolone or mozzarella cheese (4 oz.)


    Instant Pot/Pressure Cooker

  1. In a 6-qt. electric or stove-top pressure cooker combine sausage, peppers, diced tomates, tomato sauce, broth, garlic, and Italian seasoning.
  2. For an electric cooker, bring to boiling using saute setting. For a stove-top cooker, cook directly in the pot. Simmer, uncovered, 5 minutes.
  3. Stir in pasta.
  4. Lock lid in place. Set electric cooker on high pressure for 8 minutes. For stove-top cooker, bring up to pressure over medium-high heat; reduce heat enough to maintain steady (but not excessive) pressure.
  5. Cook 8 minutes.
  6. Remove from heat. For both models, let stand 15 minutes to release pressure naturally. Release any remaining pressure. Carefully open lid.

  8. Gently stir in basil.
  9. Plate pasta and top with cheese.
