Coconut Rice

    If you prefer, you can use all water instead of partial coconut water.


  1. 3 T coconut oil
  2. 1 c onion, finely chopped
  3. 1 t salt
  4. 2 c basmati rice
  5. 1 (17.6 oz) can coconut water, or water
  6. 12.4 oz water
  7. green onions, diced (for garnish)


  1. Melt coconut oil in medium saute pan on medium low heat.
  2. Add onions and cook until golden, 8 to 10 minutes. Add salt and stir.
  3. Add rice and stir to coat with the oil.
  4. Add coconut water and water, and bring to a boil.
  5. Reduce heat to low, cover, and simmer gently for 15 minutes.
  6. Remove from heat and let the rice steam in the residual heat, covered, for 10 minutes.
  7. Remove lid and fluff with a fork.
  8. Garnish with green onions.
