Chorizo Dogs with Avocado Salsa

    If you prefer, you can grill the Chorizo Sausages, and saute the onions in olive oil.

    I really like the Whole Foods Chicken Chorizo Sausages!

Ingredients

  1. 1 T plus 1 t olive oil
  2. 4 fresh chorizo sausages
  3. 1 red onion, halved and thinly sliced
  4. 3 T finely chopped fresh cilantro
  5. 3 T finely chopped fresh flat-leaf parsley
  6. 2 t finely chopped canned pickled jalapeños and carrots
  7. 1/2 jalapeño chile, seeded and finely chopped
  8. 2 t red wine vinegar
  9. 1 small clove garlic, finely chopped
  10. 1 avocado diced
  11. 4 hot dog buns
  12. 4 slices Monterey Jack or Muenster cheese
  13. 1 cup thinly sliced radicchio

Instructions

    Chorizo

  1. Preheat the oven to 400°.
  2. In a large nonstick skillet, heat 1 T oil over medium-high. Add the sausages. Cook, turning occasionally, until cooked through, about 15 minutes. Transfer to a plate.
  3. Add the onion to the drippings in the pan. Cook over medium heat, stirring occasionally, until golden brown, about 5 minutes. (If needed, add 1 to 2 tbsp. water to the pan to prevent the onion from burning.) Season with salt.
  4. Salsa

  5. In a bowl, toss the cilantro, parsley, jalepeno, vinegar, garlic, and the remaining 1 t oil. Just before serving, toss with the avocado and season with salt and pepper.
  6. Dogs

  7. On a foil-lined baking sheet, bake the buns, split-side up, until toasted, about 3 minutes.
  8. Top with the cheese. Bake until the cheese melts, about 2 minutes.
  9. Top each bun with 1 sausage, the radicchio, onion, and avocado salsa.
