Sauerkraut Balls

    This is a recipe my friend Terry's mother used to make!

    You can double this recipe, if needed.

    These can be frozen and reheated in a 350°F oven.

Ingredients

  1. 2 oz pork sausage, or kielbasa, finely chopped
  2. 2 oz ham, finely chopped
  3. 2 oz corned beef, finely chopped
  4. 1 oz onion, finely chopped, (1/4 c)
  5. 1/4 T parsley
  6. 1/4 T dry mustard
  7. .5 oz flour, (1/2 c)
  8. 1/4 t salt
  9. 1/2 c milk
  10. 1/2 lb sauerkraut, drained and finely chopped
  11. flour for breading
  12. beaten egg plus 3 T water
  13. bread crumbs

Instructions

  1. Brown sausage in skillet. ( If using kielbasa, skip to next step.)
  2. Add corned beef and ham and kielbasa, if using, and continue browning.
  3. Place in stock pot.
  4. Add flour, salt and dry mustard, add milk and mix well.
  5. Add parsley and onion. Mix and cook until mixture thickens, about 5 minutes.
  6. Add sauerkraut and cook 2 minutes longer.
  7. Shape into small balls.
  8. Dip into flour, then into egg wash,, and then into bread crumbs.
  9. Fry in vegetable oil at 375°F for 1 to 1/2 minutes.
