Spaghetti with Chianti and Edamame

    This is a fun, and easy recipe to make! Consider using chive and onion cream cheese for added flavor!

Ingredients

  1. 1 (750 ml) bottle Chianti wine
  2. kosher salt
  3. 1 lb spaghetti
  4. 2 T olive oil
  5. 12 oz spicy Italian sausage, casings removed
  6. 1 shallot, chopped
  7. 1 clove garlic, minced
  8. 1 c freshly grated Parmesan
  9. 1/4 c cream cheese, or chive and onion cream cheese, room temperature
  10. 2 c shelled frozen edamame, thawed
  11. 3 t chopped fresh basil

Instructions

  1. Add the wine, 8 cups water and a handful of salt to a pasta pot.
  2. Bring to a boil over high heat.
  3. Add the spaghetti and cook until just shy of al dente, about 8 minutes.
  4. While the pasta is cooking, heat a large skillet over medium-high heat.
  5. Add the oil and sausage to the hot pan. Cook, breaking up the sausage with the back of a wooden spoon, until almost fully cooked, about 4 minutes.
  6. Add the shallots and garlic, and cook an additional 2 minutes, stirring often.
  7. Using tongs or a pasta fork, remove the pasta directly to the sausage pan. Reserve the pasta liquid.
  8. Sprinkle with 3/4 cup of the Parmesan, and toss with tongs to combine.
  9. Add the cream cheese, edamame, 1/4 teaspoon salt and about 1 cup of the pasta water.
  10. Stir with a wooden spoon to combine, adding more pasta water as needed to form a sauce and coat the pasta.
  11. Serve sprinkled with the remaining 1/4 cup Parmesan.
  12. Garnish with fresh basil.
