Farro Salad with Asparagus, Snow Peas, and Tomatoes

Ingredients

  1. 6 oz asparagus, trimmed and cut into 1-inch lengths
  2. 6 oz snow peas, strings removed, cut into 1-inch lengths
  3. salt
  4. pepper
  5. 3 T extra-virgin olive oil
  6. 2 T lemon juice
  7. 2 T shallot, minced
  8. 1 t Dijon mustard
  9. 1 recipe Farro
  10. 6 oz cherry tomatoes, halved
  11. 3 T fresh dill, chopped
  12. 2 oz feta cheese, crumbled (1/2 cup)

Instructions

  1. Bring 2 quarts water to boil in large saucepan.
  2. Add asparagus, snow peas, and 1 T salt.
  3. Cook until egetables are crisp-tender, 2 to 3 minutes.
  4. Using slotted spoon, transfer vegetables to rimmed baking sheet and let cool for 15 minutes.
  5. Whisk oil, lemon uice, shallot, mustard, 1/4 t salt, and 1/4 t pepper together in large bowl.
  6. Add cooled vegetables, farro, tomatoes, dill, and 1/4 cup feta to dressing and toss to combine.
  7. Season with alt and pepper to taste and transfer to serving bowl.
  8. Sprinkle salad with remaining 1/4 cup feta and serve.
