Italian Hot Chocolate

    This drink is very rich, so serve small portions in espresso cups.


  1. 4 oz bitterswet chocolate 70% or higher, or 3 T cocoa powder
  2. 1 1/2 c whole milk
  3. 2 T sugar
  4. 2 t corn starch, mixed with 2 T cold milk


  1. In a saucepan over LOW heat add chocolate and a smidge of milk. Stir with a wooden spoon until melted.
  2. SLOWLY add remaining milk stirring until it is well combined.
  3. Add sugar, mix to combine.
  4. Whisk in corn starch mixture.
  5. Continue cooking over LOW heat until it becomes thick, creamy and coats the back of the wooden spoon.
