Southern Collard Greens

    This is similar to the collard greens served at Hatti B's in Nashville.

    Add a dash of cider vinegar at the table for a little added zip!

Ingredients

  1. 1 T canola oil
  2. 1 sweet onion, chopped
  3. 1/4 lb ham, chopped
  4. 2 garlic cloves, minced
  5. 1 (32 oz) container chicken broth
  6. 1 lb fresh collard greens, washed and trimmed
  7. 2 T apple cider vinegar
  8. 1 t sugar
  9. 1/3 t salt
  10. 1/4 t pepper

Instructions

  1. Saute onions in oil, until tender, about 5 minutes.
  2. Add ham abd garlic, saute 1 minute.
  3. Stir in broth, greens, apple cider vinegar, sugar, salt and pepper.
  4. Simmer covered for at least 2 hours, or to desired degree of tenderness.
