Nashville Hot Chicken Tenders

    This chicken is similar to the Nashville Hot Chicken we had at Hattie B's in Nashville!

    Warning, the sauce is exptemely hot and spicy, only use a small amount at first, until you determine how much heat you like!

    If you prefer, you can purchase jarred Ghee in your grocery store!

    My favorite way to eat this chicken is to wrap a piece of white bread around a tender and serve with Dill Pickle Dip! Yummy!

Ingredients

    Chicken

  1. 3 lbs chicken tenders (approximately 24 tenders)
  2. 2 eggs
  3. 1 c buttermilk
  4. 1 T vinegar-based hot sauce, such as Texas Pete
  5. 2 c flour
  6. 4 t salt
  7. canola oil for frying
  8. Sauce

  9. 1/2 c unsalted Clarified Butter, Ghee
  10. 2 T brown sugar
  11. 2 1/2 T cayenne pepper, more or less to taste
  12. 2 t black pepper
  13. 1 t smoked paprika
  14. 2 t garlic powder
  15. 1 T honey
  16. Chicken Tenders

  17. white bread sliced for serving
  18. pickle slices for serving
  19. Dill Pickle Dip for serving, optional

Instructions

    Chicken

  1. Whisk together eggs, buttermilk and hot sauce in a medium bowl, set aside.
  2. Combine flour and salt in a medium bowl, set aside.
  3. Add oil to your deep fryer or deep sided cast iron pan. Heat until oil reaches 350-375°F.
  4. Pat chicken dry with paper towels and then dredge in flour mixture, shaking off excess.
  5. Then dredge in buttermilk mixture, shaking off excess.
  6. Finally, dredge in flour mixture again, shaking off excess.
  7. Set each coated piece on a wire baking rack, set over a baking sheet, as you work in batches to complete the remaining pieces.
  8. Place chicken in frying oil, working in batches as needed, and fry tillgolden brown and temperature reaches 165°F, turning chicken as needed to ensure even frying, about 5 minutes.
  9. Place cooked chicken on a separate wire rack, set over a baking sheet, until all chicken has been fried.
  10. Turn off heat and let the oil cool slightly.
  11. Sauce

  12. In small saucepan, melt clarified butter.
  13. Whisk in brown sugar, cayenne pepper, salt, pepper, smoked paprika, garlic powder and honey.
  14. Serve immediately over chicken tenders with white bread and pickles as accompainments.
