Green Bean Pasta Salad

  1. 1/3 c olive oil
  2. 1 pt cherry tomatoes
  3. 1 large shallot, finely chopped, or small onion, finely chopped
  4. 2 cloves garlic, finely chopped
  5. 1/2 t crushed red pepper
  6. 12 oz gemelli or casarecce pasta, or your favoite type
  7. 1/2 lb fresh green beans, trimmed
  8. 1/2 c Parmesan cheese
  9. 1/2 c parsley, chopped
  10. 1/2 c basil, chopped
  11. 1/2 c chopped roasted red bell pepper from jar, or fresh roasted pepper, chopped
  12. feta cheese for serving


  1. In skillet, cook olive oil, cherry tomatoes, shallot, garlic, and crushed red pepper over medium heat, stirring occasionally until tomatoes start to burst, about 6 minutes.
  2. Transfer to a large bowl, season with salt and pepper.
  3. In pot of boiling water, cook pasta until al dente; add green beans during last 2 minutes of cooking.
  4. Drain pasta and rinse under cold water until cool.
  5. Add pasta to bowl with tomato mixture.
  6. Add cheese, parsley, basil, and roasted red peppers, stir well.
  7. Serve at room temperature or chilled.
  8. Top with crumbled feta cheese if desired.
