Overnight Coffee Cake

Pre-Notes

    This is a good coffee cake to make on Easter morning, because it can be prepared the night before.

    If you want to prepare the cake and bake it immediately, reduce the baking time by 10 minutes.

    You can use a combination of chip flavors for the topping to add a little variety.

Ingredients

    Cake

  1. 6 oz butter, softened, 1 1/2 sticks, (170 g)
  2. 1/2 c brown sugar, light or dark, firmly packed, 3 3/4 oz, (106 g)
  3. 1 c sugar, 7 oz, (198 g)
  4. 1 t baking powder
  5. 1/2 t baking soda
  6. 3/4 t salt
  7. 1 t cinnamon
  8. 1 t vanilla
  9. 2 eggs
  10. 2 c flour, 8.5 oz, (241 g)
  11. 1 c sour cream or yogurt, low fat is fine, 8 oz, (227 g)
  12. Streusel Topping

  13. 3/4 c brown sugar, light or dark, firmly packed, 5 5/8 oz, (241 g)
  14. 3/4 c chopped pecans or walnuts, optional, 3 oz, (85 g)
  15. 3/4 t cinnamon
  16. 1 c chips (butterscoth, cinnamon, chocolate, cappuccino), optional 6 oz, (170 g)

Instructions

    Cake

  1. Lightly grease a 9x13 pan.
  2. In a large mixing bowl, beat together the butter, brown sugar, sugar, baking powder, baking soda, salt, cinnamon, and vanilla, mixing until smooth.
  3. Add the eggs, one at a time, beating well after each addition.
  4. Add the flour alternately with the sour cream or yogurt, stirring to combine.
  5. Spoon the batter into the prepared pan.
  6. Sprinkle the topping over the batter in the pan.
  7. Cover the pan with plastic wrap, and refrigerate overnight.
  8. Streusel Topping

  9. Combine the brown sugar, nuts (if using them), cinnamon and chips (if using them), stir to combine.
  10. Baking

  11. The next morning, take the cake out of the refrigerator, and preheat the oven to 350°F.
  12. Bake the cake for 40 to 45 minutes, until it is golden brown on the top.
  13. Remove it from the oven, and cool briefly before serving.
